3 / Manabi (Learning about sushi)

Learn the history of sushi by a sushi quiz and

refine your technique with a sushi toy,

learning the precision required to shape elegant nigiri

4 / Shari (Sushi Rice Preparation)

Master the foundation of sushi by preparing shari,
comparing the deep umami of red vinegar (akazu) with the lightness of white vinegar (shiro-zu)

5 / Maguro Kurabe (Tuna Sushi Comparison)

Create and compare two styles of tuna nigiri—marinated tuna with akazu rice and fresh tuna with shiro-zu rice
